Ingredients (for 8 people):
• 500 g (17.6 oz) of well sifted flour
• 150 g (5.3 oz) of granulated sugar
• 3 eggs + 1 yolk to glaze the cake
• 150 ml (5.07 fl. oz) of milk + 1 tablespoon of milk to glaze the cake
• 150 g (5.3 oz) of softened butter cut into small cubes
• 150 g (5.3 oz) of candied fruits (100 g (3.5 oz) in the dough and 50 g (1.7 oz) for garnish)
• 1 packet of yeast
• 5 tablespoons of pearl sugar
• 2 tablespoons of orange blossom water
• a pinch of salt
Directions:
• Soften the butter.
• Pour the yeast into a small bowl and add 2 tablespoons of lukewarm water (no more than 95° F). Set aside for 15 minutes. After that time, stir.
• Mix the eggs with the granulated sugar.
• Pour the flour into a large bowl in the shape of a mound. Create a large depression in the center of the mound and pour the yeast mixture, eggs/sugar mixture, orange blossom water and salt into this depression. Little by little incorporate the flour into the mixture in the depression, then little by little incorporate the milk into the dough. Important: stop incorporating the milk once you have achieved a dough that is sticky and homogonous and starts to detach easily from the walls of the bowl, even if all the milk has not been used.
• Continue to knead the dough and then begin to incorporate the softened butter into the dough. Knead until the butter is completely incorporated into the dough.
• Knead the dough in long stretching movements for 5 minutes with the goal of incorporating as much air into the dough as you can.
• Place the dough in a container and cover with a clean towel. Set aside in a warm spot and away from drafts (at around 95° F). The dough must triple or quadruple in volume.
• Cut 100g (3.5 oz) of candied fruits.
• Once the dough has tripled or quadrupled in volume, incorporate the cut candied fruit into the dough and place it on a cooking tray covered in parchment paper and shape it into a ring.
• Place the ring in a warm location free of drafts and allow it to rise for an hour.
• Cut 100g (3.5 oz) of candied fruits.
• Preheat the oven to 302° F
• Glaze the top of the cake with an egg yolk mixed with a tablespoon of milk. Then dust with pearl sugar.
• Bake for 30 to 40 minutes or until the cake is golden in color.
•Remove from the oven and garnish with candied fruits cut into pieces.
